You certainly can if you'd like, and I'll absolutely agree with the bacon-cooking statement, as I experienced that greatness first hand in DV. So the griddle shall be yours! :)

The pack that I pick up from Sam's Club (and was planning to bring on this trip) is is 3.5 lbs. The pack that I brought to DV was only a pound, so I was planning to bring about 4 times as much. 30ish people x 2 breakfasts / 3.5 lbs of bacon = 2 to 4 slices per person per morning, but there's NEVER a such thing as too much bacon! :D (If you're like me, you were thinking "only 4 slices each!?!?")

Trouble is, should I just get a complete second pack and take it up to 7 lbs? I wouldn't want to see it go to waste. I might be able to track down some more 1 lb. packs at Winco if we want to bump it up to about 5.5 lbs?

No worries xxSVxx.  We'll make sure there is plenty o' bacon!  ;)

I think 3.5 lbs per breakfast......I've never ever ever ever ever ever ever ever seen left over bacon.  And if there is any, bacon makes an awesome trail snack.....just saying  O0

We'll spring for the second pack (and cook it on your awesome griddle) if you're willing to pick it up.   :D

Sounds good Barb, consider it done! I agree, there's no such thing as too much bacon. I'll pick up two packs and collect some $ when we meet up in Laughlin. :)

I'll re-hash..

I'll contribute to Toro's carne asada cooking on the first night and contribute 3lbs of meat.  I can also kick-in/purchase supplies for the community breakfasts or dinner on the second night.  It's been a long time since I've camped and I don't want to try to cook for a large group until I can re-hone my skills, and I have no particular specialty that I can contribute.

edit:  Back in the day when I camped with my dad and brothers, we always did a campfire stew; meat, carrots, potatoes, celery, seasoning, etc. in individual foil packages or sometimes in one big package cooked directly on the coals.  The foil method would be hard to do with a large group, but if someone has a Dutch oven we might be able to do something similar.

I'm in for breakfast again.  Pancakes and eggs to order.  If you want scrambled eggs bring stuff to blend in, like onions, peppers or whatever you like.  If you really like eggs, bring a dozen and we'll see how many get scrambled on the trail :o   If you like any syrup other than maple, bring enough to share.  If I get enough chatter here, French Toast could also happen lol
FYI, I have Custom Modified Yota's old grill to handle 300% more pancakes >:D

I'm still in for lots and lots of bacon (are we still doing 2 breakfasts?). I will pick up one giant pound pack and I believe Mike and Barb wanted me to pick up a second pack so we'll do one pack Saturday morning and the other Sunday morning. I'm also bringing my 3 burner camp chef stove and 38" griddle to cook the bacon on (hopefully Mike and Barb are still willing to be the bacon chefs, because their bacon cooking skills are amazing!) along with a 10 pound propane tank, and the setup can be used for dinners as well if we need.

Somebody (HINT HINT xxSVxx) should start a list so we don't end up with to many of one meal.

I believe Celt and I are both going to make a stew for for one of the night meals 
so put us down for a dinner

I can make enough stew in my oven to serve about 8 people. I can handle everything for it that way it's easier, just need a fire going to be able to use the coals for the oven. My Dad is hinting at wanting to go along again so if that's true I'll have him make up a large pot of beans and some tortillas to go with the Ranchera Especial night.
