Does anyone know where i could get a write up on how to replace the driving belts (not the timing belt) on a 2000 xterra?

Now I've never done this before!!!!
so do i first adjust the Idler Puller bolt to loosen then remove the belt?

Depending on the belt, maybe; kind of depends on exactly which one to which you're referring.

Typically the bolt in the center of the pulley fastens it; it must be loose before going after the tensioning bolt.

I'm doing all three and changing the pulley. unless someone thinks i shouldn't.
I am also installing a new thermostat (X is starting to overheat)

Correct. 

Unless the idler pulley bearing is making noise, it doesn't need to be replaced.  You also can track down a bearing for $10 instead of paying lots more bucks for an entire assembly.

Hi Bobby was unable to change the belts this weekend my little girl was sick.
I should be able to get it done this weekend

If they are adjusted properly they won't require any re-tensioning.
